100% Pinot Noir, from Old Vines older than 50 years. Communal appellation, the Red of Saint-Hipoplyte, from the Clos des Aubépines, owns a clear nose of grilled spicies and ripe red fruits. The mouth is smooth with silky tannins.

Description of the Terroir : From Old Vines older than 45 years. A very particular soil which is brown with a granitic substrate (granitic composition - mica, quartz and feldspaths) giving delicate and lenght wines.
Harvest and Vinification: Capacity of 3500 litres per hectar. Hand picking with grape sorting and selection. Total destem. Partial 60°C maceration in horizontal and circular tank (vinimatic). Slow and progressive pressing. Flow of the must by gravity. Alcoholic and malolactic fermentation regulated between 18°C and 20°C. Growing on thin sediments. Traditional cork.
